Please join Chef Frank Brigtsen, a forerunner of New Orleans chefs in revitalizing Creole-Acadian cooking. Chef Brigtsen began his culinary career under Chef Paul Prudhomme as an apprentice, then opened his own restaurant, Brigtsen's.
During his demonstration, Chef Brigtsen will prepare local favorites. He routinely incorporates local ingredients to make each morsel more interesting than the last and uses his native New Orleans palate to pay tribute to the traditions of Louisiana cuisine. As Chef Brigtsen states, "Food preparation is more intuitive and taste-directed than prescribed."
